This super satisfying vegan bolognese is packed with big flavours thanks to a load of mushrooms, a generous splash of red wine, and plenty of fresh herbs. Bolognese is usually served with spaghetti but we've used orzo pasta here which is more packable and just as delicious. If you want to really bring a dose of Italy to this mega comfort dish, bring along a wedge of Parmasan or Grana Padano for grating (save the rest for snacking), and a nice glass of Chianti makes a perfect pairing.
