My take on the French classic casserole. It starts with a leek, carrot, and celery mirepoix, cooked until tender then slow cooked with aubergine, mushrooms, wine, and white beans. The final flourish is a crispy crunchy topping of garlicky bread crumbs. The bread crumbs come in a separate packet and are also a tasty topping for soups and salads!
