This hearty dish harkens back to my days in New Orleans! Jambalaya is a Creole rice dish of West African, French, and Spanish influence. Key ingredients include the "holy trinity" of Cajun veggies - onions, celery, and green pepper - and a flavour bomb of smoked paprika, chilli, oregano and garlic. We add beans to this because, you know, beans and rice are a magical combo in flavour, texture, and nutrition. Fun fact: beans and rice together make a complete protein! Making this a delicious AND nourishing option for backpacking adventures.
