One of our favourite all time trail recipes. We relish the flavours and aromas of Indian food, wherever we go, but especially out in the wild after a long day’s trek. Benefits abound: our red lentil dal is highly nutritious, containing plenty of protein, complex carbohydrates, and fibre. It’s also suitable for most dietary requirements. Feel free to add rice or chapati for extra oomph.

  • Ingredients: red lentils, coconut oil, onion, garlic, ginger, tomatoes, seasonal veg (typically spinach and/or cauliflower), panch phoran spice mix (fenugreek, mustard seed, cumin seed, fennel seed, onion seeds), salt and pepper.
  • Cooking method: Just add boiling water
  • Cooking time: 5 minutes
  • Bring your own: Chapati or basmati rice; Indian pickles; mango chutney
