We love pulses at ESW and this delicious dal is definitely one of our favourites, an everyday dal if ever there was one. We've been making it in our household almost weekly for the last 10 years. There's just something about it! Pure feel good food, a vegan protein powerhouse, and super versatile. What is panch phoran? It's an Indian 5-seed mix consisting of fenugreek, onion seeds, mustard seeds, fennel seeds, and cumin seeds. All those seeds pack a whole lot of flavour! Enjoy this dal as a soup or serve it alongside basmati rice and your favourite chutneys for a complete meal. Stir some baby spinach into the dal as it warms for an extra veggie boost.
